Homemade Recipes: Grilled Chicken with Mashed Sweet Potatoes

Ingredients:
For Grilled Chicken
4 pcs chicken thigh or breast
1/2 cup soy sauce
1 tbsp calamansi juice or lime juice
1/4 cup worcestershire sauce
1/4 cup barbecue marinade
3 cloves garlic, crushed
salt and pepper
butter

For Mashed Sweet Potatoes
3 medium sized sweet potatoes (kamote), boiled and peeled
1/2 cup milk
2 tbsp butter

Serves 3
Prep Time 10 minutes
Cooking time 30 minutes

Directions:

For Grilled Chicken:
1. Bring water into a boil and cook chicken for 5 minutes. Drain all the water and set aside.
2. In a medium-sized container with lid, combine all ingredients except for butter. Turn each side of the chicken until fully coated. Cover and let it stand for an hour.
3. Pre-heat grill.
4. Place each chicken in a griller and flip each side until thoroughly cooked. Top with a slice of butter while hot to add flavor and gloss.

For Mashed Sweet Potatoes:
1. In a large bowl, mash boiled sweet potatoes until smooth.
2. Add butter and milk. Mix well.
3. Season with salt and pepper (optional). Serve with chicken. Keep it warm.

Homemade Recipes: Pork Salpicao and Thai Mango Salad

Dig in to this tender pork recipe with a perfect contrast of tangy salad. Recipe by Karen Humilde.

Ingredients:
For Pork Salpicao
1 1/2 cup pork tenderloin
1 tbsp worcestershire sauce
1/4 cup garlic (for toppings)
1/4 cup garlic (for marinade)
1/2 tbsp liquid seasoning
1/4 cup water
pepper

For Thai Mango Salad
1 green mango, cut into strips
1 ripe mango (yellow), cut into strips
1/2 cup salted peanuts, slightly toasted
2 teaspoons fish sauce
3 teaspoons white or brown sugar

Serves 3
Prep Time 15 minutes
Cooking time 20 minutes

Directions:

For Pork Salpicao:
1. Marinate pork in worcestershire sauce, liquid seasoning, garlic, pepper and water. Let it stand for 15 minutes.
2. Heat oil in a pan. Add garlic until cooked but not toasted. Set aside.
3. Using the remaining oil, add the marinated pork and cook for 15 minutes.
4. Top it with cooked garlic. Serve hot with a cup of rice.

For Thai Mango Salad:
1. In a medium-sized bowl, combine green and ripe mango.
2. Add fish sauce and sugar. Mix well. Top it with salted nuts.

Merry Malaysia: Batu Caves

Dubbed as the focal point of Hinduism culture in Malaysia, Batu Caves attracts hundreds of visitors a day and more than 1 million guests during Thaipusam, a yearly Hindu festival being strictly observed by the Tamil community.

We took the KTM Komuter since it was the easiest route coming from Kuala Lumpur. The train was spotless and looks relatively new. The seats were like a fusion of a bus and train. It is very spacious too, making our trip to the Batu Caves a lot more conducive.
